My wife is similar in height and she used to ride the 509 (also with a seat 
height of 800mm) as her first bike without any problem. She was not fully 
flat on the ground, but also was not on her toes. The bike is balanced so 
well that you don't feel like it is trying to get away from you when you stop.

I don't think I would recommend removing any foam from the seat (unless you 
have a thing for pain....)
