I never thought about it, but since the fuel has to be pressurized for the
FI, that's probably why a petcock won't work. I know it's not advised to
run a FI bike or car completely out of gas, because it's hard to get the
line primed again. So even a small delay in switching over the petcock
might make the bike completely stall.
