During the period of time that it was acting up, did you actually ever try
turning the ignition key off, or did you simply re-hit the starter button
when it stalled?

If/when it happens again try turning the key off and then back on before
re-starting. If the problem goes away, then you are experiencing an
intermittent and as-yet unconfirmed problem that has been reported by many
ST owners, usually within the first few months when new. It has been
suggested that the ECU needs to be reset to clear the symptom (btw, there
will be no error codes logged). It may also be a sticking Idle Air Control
Valve that will loosen up over time. I had this symptom a few times when my
bike was new, but it hasn't happened for over a year now, but each time it
disappeared after the ignition key had been turned off.
