I also have a 190/50 ZR17 Bridgestone BT56R on my ST. It is already my 3rd one
in this size and I never had any problems at all with it! I even didn't
experienced a worse handling than with the original 180 which I first had. The
size 190 is also written as possible to use in the papers you here (in Germany)
need for your "vehicle" to be allowed on the streets - I know most of you don't
need something like this ;-) -, so it should be alright from the manufacturer
side too to have it...

Personally I NEVER got my bike down to any parts of it - although I really
tried hard to do it (alright, I may be too fearfull to REALLY try it, some of
you might say ... :-)) ). During my last weekend-trip to the Alps I had some
really fast curves but never touched ground in any way. The only thing I
experienced was a little silde once but maybe I was just a little bit too fast
there. To end this whole thing up here: at my tire there are always about two
millimeters left to the corner which I (that's ME, I'm not talking of anyone
else) just CANNOT touch.
