Larger tire on the Daytona is because of bigger motor  - not "more agility" 
There is no perceptible/measureable differences in contact patch size 
between a 160, 170, 180 or 190 (assuming you are running at 
standard/recommended pressures (this from a Dunlop Tire rep

My tz250 has vastly more "agility" than the Daytona could dream of having. 
And it runs a 160 in the rear on a 5 1/2" rim. At ~88hp, it doesn't need 
anything bigger. My 748 is much quicker in corners (i.e. more agile) than 
my ST (but nowhere near the tz in cornering capability)- and it uses a 180 
stock. At ~100hp the ST just doesn't need anyting bigger than a 180 (and 
debatable that it needs bigger than a 170). The 190 is on that Daytona so 
it will hold together/last when you grab some big throttle.
