"Budget isn't an issue. We are meat eaters but can handle most
anything.
Something with a history and reputation for good food. Example: We
would
go to a local steak house much quicker than a Ruth's Chris Steak House
regardless of cost as long as the food is the same or better."

Boy, ar you in luck. "Bones" one of the top ten steak houses in
America. As listed in the in flight mags. Back when I was travelling
with a company, my cohorts and I had a "quest" to bag all ten. I was
ill the night they went to Bones and they NEVER tire of telling me how
good it was. I'm with you; Ruth's and Mortons are almost as common as
MacDonalds any more. Very Good, but if there's a local, go for it.
If your in need of some quick nourishment, there's a cool Jamaican
restaurant across the street from the Fox Theater that's good, cheap,
and informal. (Or was when I was there last. '98).
