Erik,
I have thought about that same question as well, even before I had my
daughter (she's 5 mo's old now).  But here is the way I see it.  If your
wife was a sky diver and was passionate about it, would you ever ask her
not to do it?  Who would be the selfish one there? (I'm not insinuating
where your guilt is originating from :^)
If you really enjoy motorcycling (the way I think you do), then you
shouldn't feel guilty even if something bad ever did happen to you.
Your family should know that you're doing one of the things that really
makes you feel alive, what gives you character, what drives your
ambition in life. I don't think it's selfish at all to do things that
are inherently riskier than others.  You just have to make time to do
the other important  things that you love to do as well, like watching
your kid grow.  It's a sense of balance really.  The important thing is
that you don't ever reach that point in your life when you say "Gee, I
wish I would have spent more time with my kid".... or... "I wish I would
have rode out to (fill in the blank for a trip of a lifetime). "

Moderation is the key, my friend.  Just be responsible and get yourself
a good life insurance policy.  ;^)
