Sorry, I forgot to answer these points. It will slow your turn in down.
Apparently quite a bit so I don't think I'd actually choose to go that way
on an ST (they're pretty slow steering anyway). I was actually considering
putting a 180 back on my S3 but the lure of the huge looking 190 was too
much ;-)

Apparently you can actually fit a 200 wide tyre if you want to. There's a
guy on the S3 list I'm on who's done that and says it clears everything no
problems. It would probably turn the ST into a bit of a barge though. Also
if the tyre is a lot wider than the rim (i.e. if your sidewalls aren't
nearly vertical) you will loose a fair bit of feel and precision from the
back end too.
