 From my fire department training:

You need three things to create fire:

Fuel (something flammable)
Oxygen
Heat

Remove one of the three and the fire goes out. The chemical process of 
oxygenation is what fire is really about, and you need the heat because 
solids don't burn. (I didn't believe this either when I first heard 
it.) Only gases burn. The yule log you throw on the fire burns because 
you've heated it up enough that the surface starts turning to gas, and 
the gases combining with oxygen are what produce the flame, and the 
heat, which in turn continues the process.

Chemical fire extinguishers work by smothering the fire, in essence 
pushing the oxygen away from the fire and replacing it with some other 
chemical.

Spraying water on the fire takes away the heat.

Having a bunch of prison grunts scrape away the grass and brush removes 
the fuel.

Smoking while taking a drag from an oxygen bottle is a great way to 
remove your eyebrows. It's not that the oxygen itself is flammable, but 
it will accelerate the process of anything else burning because 
normally the atmosphere only contains 20.9% oxygen. So add 100% oxygen 
to the mix and you now have 5 times as many possible chemical 
reactions.

I don't know why nitrous oxide is used in drag racing rather than pure 
oxygen? Anyone know that one?
