Ok.  Just like they do racing the dirt track ovals.  I thought that was the thing to do.  Unfortunately instinct tells the body otherwise.  Which means we should do like you said and practice that technique off road with a smooth rear and a knobby front, thus creating a new "muscle memory" instinct.

They key is to ride the slide out--don't chop the throttle and don't 
hit the brakes.  Keep a steady throttle and steer the bike into a 
straight line.  Worst case, you can't catch the slide and you end up 
low-siding the bike.
