[ST] Widder Bi-Metal Thermostat, any good?

I have a line on a System 2 vest that comes with the
Bi-metal thermostat:

Looking to see if these are reliable and if there is
any real detriment to using these as opposed to a heat
troller....I'm thinking the Bi-metal thermostat is
really a rheostat in which I will be drawing full
power all the time from the charging system and the
controller will just tone it down b4 it gets to my
vest, whereas the Heat troller pulses and only draws
the specific amt. of heat u specify. (I'm new to
this, so bear with me, is my thinking sound here?)
