American 89 octane is the closest. Octane=RON+MON/2 We don't sell gas in the states as 95RON

I think my manual says to use 95 ROM gas. The pumps here in the US use a different calculation for octane that yields numbers like 87, 89 and 91. Which of these is the correct stuff?

I recommend using what the manufacturer recommends and don't worry about
it. Don't use premium if they say 89 is OK because that actually isn't
"better" just costs more.
