There is a bleed valve on the top of the radiator on the right side. I tried changing my own coolant once (for a track day) and am pretty sure I had an air bubble or something in there. Didn't get as much coolant in as expected and my bike behaved much like yours. Didn't overheat, but was much quicker to heat up in traffic. The shop tech swapped the coolant out at my 36K service and mentioned it looked low (yet it indicated fine). Seems fine now.
