I can drop the rear wheel on my Sprint in 5 minutes easy. Putting it back on is more of a PITA though to get all the required spacers to stay in place, brake rotor, etc and then get the chain adjusted with the wheel straight.

Up on centerstand
Loosen axle nut
Loosen chain adjusters (two bolts plus lock nuts)
Push wheel forward to slacken chain
Pull chain off sprocket
Tap/Pull axle
DONE!
