I replaced my chain just recently.  While I don't have any long term info for you on the chain, after doing research I was able to get a pre-cut 108 link D.I.D. 530 ZVM (their top of the line) for $138.95 to my door - a really good price for top of the line chains from any manufacturer.  I purchased it from MotorcycleOnlineStore.com.  Was shipped and arrived promptly.  The jerkiness could be attributed to the chain.  Mine was had some bad stretch points, and the new chain really smoothed out the lower revs.
 
I've had no problems with either of my Sprints, so I can't offer much on the stalling.  Were the valves checked at 11,500 miles?  You can also easily check the plugs for problems.  I would also check the air filter and air box for junk.

My 2000 RS has 17k miles and the chain is needing to be replaced.  Any
suggestions on type/brand of chain?

Also, I'm getting an occasional stall and somewhat jerky throttle
response, mainly at lower 3000-4000 rpm.  It's a new condition.
Sometimes it will stall when I pull in the clutch as I'm rolling to a
stop.  Once in a while it will stall while idling.

It had a major tune up by Great Bay (good Triumph dealer) about 3 years
ago when it had 11,500 miles.

Any thoughts?  I would wonder about an idle control, but I'm also
feeling that the bike is "missing".  I've had mass air flow sensor
problems in cars and this kindof reminds me of that.

I will probably replace the plugs, but shouldn't plugs last longer than
6k miles?
