My manual is specifically for the ST. (I've just noticed my dealer didn't 
complete the first service log entry). The correct manual has diagrams of 
the ST. Ask for the correct one.

Clutch hand? Kung Fu grip.

Clock is easy. Left button for hours, minutes on the right. Clock info is on 
page 18 on the ST manual. Hint - don't change the time with gloves on. The 
buttons have an "anti-glove" device enabled.
