Absolutely!

Well the front wheel is usually done with the discs attached.  On the ST the
back wheel comes off on it's own, without the disc or sprocket.

Not really.  Besides if you're getting the tyres fitted at a workshop they
should have the appropriate balancing equipment there.  No reputable tyre
dealer should fit new tyres without balancing afterwards.

If you take it some where, it's often a good idea to stand around and watch
them do the job.  This way you can make sure they treat your bike and wheels
with proper care and respect.  Careless tyre fitters have been known to put
lovely deep scratches in wheel rims because they're not paying attention (or
more likely don't give a monkeys).
