FWIW  I saw a Daytona at Naults in Windham NH that had blocks of wood,
shaped and painted black, fastened as you mention, under the mirror mounts.
It essentially seemed to widen the spread of the mirrors by close to an
inch.

It didn't look all that bad, and wood is a cheap medium, such that you could
try a few attempts to get the desired results.
