You don't. I normally go for third and I'd probably go higher if I wasn't
lazy :-)

OK at say 20km/h the bike is going to be reving harder in 1st than in 6th
isn't it? Therefore in a low gear for any given amount of rotation of the
back wheel you're moving the pistons up and down further (more times), hense
less leverage (harder to turn).

Or to put it another way you have to turn the rear wheel further to move a
piston from BDC to TDC in a higher gear, therefore more leverage (easier to
turn).

If you don't believe me, try it. Put the bike on it's centre stand or race
stand, stick it in first gear and try to turn the back wheel (I'll be
impressed if you can turn it at all). Then put it in 6th and try again, you
should be able to slowly push it past TDC.
