Mike,
The coolant temperature should quickly rise to the setpoint of
the thermostat, around 190F, and not drop below that while
riding.  If you routinely see temps at 190+ in traffic but they
drop at cruise, your thermostat may not be closing fully - not a
good thing.  At lower temps, combustion efficiency suffers and
the engine oil won't get hot enough to boil off moisture and
other impurities.

It's possible your readout isn't accurate.  I'd check that first.
The easy way is with an infrared thermometer.  Many techs have
one in their toolbox.
