That doesn't sound like the symptoms I had when the coolant temp sensor went out on mine.

I experienced:
   Gauges went crazy
   Engine ran real rough, like it was missing on one cylinder
   Raw unburned fuel and black smoke were exiting the exhaust
   Engine would want to stall at idle
