The head bearings on my '99 ST felt fine but when I stripped them out they 
were almost dry after four years of everyday use.

I'd say yes, strip, clean and lube them.
I'd guess it took two hours to strip the front end off, fettle the bearings 
and reassemble.
It's also a good opportunity to clean the front end and copper slip all the 
bolts and fasteners.
