Motorcycle Consumer News back issues are good for this. There are several portable repair kits, most of which are designed for repairing without removing the tire. I have one that is slightly smaller than a brick, can't remember its name at the moment, never had to use it, so I can't speak for its usefulness.
As for reinflation, many of the kits come with compressed air cylinders, but the best idea I've seen (Rider Magazine, or MCN??) involved dismembering a 12v portable unit designed for a car's trunk and paring it down to about palm size. Stores in a Tupperware container and then connects to your electric vest connection, or what have you.
Goop works, but is a serious mess to clean up. I know the place that installs my car tires gets pretty upset at the prospect of having to deal with gooped tires.

That slime in a can works ok. Not sure of the brand but it both inflates
and fills the inside of the tire with goop.
Hope I didn't get too technical there. I pack the stuff on long trips and
it works if you're in a bind.
