Down here in France, if you have a comprehensive or if you're not responsible,
the insurance is supposed to replace the vehicle for something
equivalent for mileage and state, same model. That means that if you can prove that the market
price for your bike would be higher you can argue (ads for similar used bikes).
That said I think that it's highly depending on if you have or not other vehicles or properties
insured in this company and then what pressure you can apply.
Anyway the starting point is to prove that the price of your bike is higher (equivalent to kbb,
ads...).
