Don't sweat it.  As far as I know all Sprints do this to some degree, but my 
'03 RS does it much more than my '99 ST ever did (makes sense due to 
increase in HP too).  The ambient air temperature is mostly irrelevant --  
happens even on the coldest riding days and with almost identical regularity 
(soon after you come to a standstill in stop 'n go traffic).  However, on 
some very warm days, it almost seems that the fan is barely able to cope, 
because it takes quite awhile to bring the temp down when stationary.  That 
I find slightly troubling, but so far it has not caused any issues.  By the 
way, the temperatures you cite sound very normal as well, as it is quite 
normal for the coolant temp to rise above the boiling point (that's why they 
are pressurized).
