On the face of it, a used engine from a breaker is an economical
solution to a run out power plant. 
I've opened up every junk yard engine I've ever acquired, and found
everything from pristine fresh rebuilds to broken pistons. You rolls the
dice and you takes your chances.
A new engine might even be available for that kind of money. I'd
probably be tempted to pull the head and split the case anyway just to
take a look around. An engine that has been stored improperly can be in
pretty bad shape.
The run out original engine is a known quantity (and from the pictures a
real jewel!) A thoughtful "Rings and Bearings" level rebuild will bring
it right up to snuff, and should reveal no surprises. If I were in the
Dirty one's shoes, I'd likely follow the same path.

Mr. Dirty Dog,
 
I am curious as to why you are paying a mechanic 3 grand to rebuild your
engine when you could get a wrecked bike or  possibly a new engine from
Triumph for that much or less.  Unless I am mistaken, it seems that
there might be a more cost effective solution to your problem.  Don't
get me wrong, your posts have been extremely educational and are
appreciated.  Maybe I do not understand because I begrudge every cent I
have to give a mechanic of any kind.
