Supposedly some of the Magellans and TomToms can too. I know the cheap Magellan 2000 I got my parents doesn't. But Garmin seems to be the best supported (officially and by 3rd party software) for extracting logs & routes. Garmin has an FAQ on their website that lists which models have logging.
