Well....the 675 IS a very narrow engine (certainly compared to a GS :)  and
has plenty of torque.  I guess it's a trade-off between smoothness and
power.  For me, a 675 DS would hit the sweet spot, bang on.

I would only go for a single or v-twin for a DS. I don't want the 
engine sticking out on something very likely to be dropped. Plus for 
the dirt I'd rather have the extra torque of a single or twin.
